Description
A true gourmet treat and delicacy, Belle Vie Farm's French White Moscovy ducks are full of rich flavor. Living in the pasture within small groups and 100% organically fed, the ducks produce a leaner meat than commercially farmed varieties, with thin skin, large tender breasts, and succulent legs. While whole roasted ducks are the ultimate show stopping center piece, they can be broken down into smaller cuts where the breasts and thighs are allowed to shine in recipes such as duck a'l orange using fresh Texas citrus or duck confit with fresh herbs.Cooking Instructions for Whole Roasted Duck: Preheat oven to 475F. Roast duck, breast side up, for 20 minutes. Reduce temperature to 400F and continue roasting until desired doneness is reached (135F for medium, 165F for well done), approximately 40-60 minutes. For an extra juicy and flavorful bird, we recommend brining your duck for 12-24 hours before cooking.
