Scamp Grouper has a mild but very unique taste, large flakes and a firm texture. It’s somewhat of a cross between bass and halibut. Available year-round with peak catches in the Atlantic and Gulf of Mexico occurring during the summer and fall, grouper meat cooks up very firm and holds its moisture better than other fish. It is excellent seared, broiled, baked or poached.- No hormones
