Not only is it delicious, it's also free of dairy, nuts, egg, potato and rice, while boasting high protein, fiber, B6, zinc, magnesium, calcium and vitamin C. Keep refrigerated or frozen for extended enjoyment. Many years ago, after being diagnosed with exercise-induced anaphylaxis triggered by gluten, and learning of the limited options-gluten-free people had available to them, GFY owner and baker Tim Elias began experimenting with his own gluten-free flour blends. Once he perfected his proprietary gluten-free flour, he created recipes and a business plan to take over the world… (or at a minimum, the gluten-free community in Austin, TX). All GFY products are baked from their proprietary gluten-free, nut-free, rice flour blend and contain no preservatives, artificial ingredients, or cornflour. GFY bread is hearty, moist (not crumbly like some gluten-free bread you may have tried), and full of flavor. They're what gluten-free bread is supposed to taste like.
