Force of Nature utilizes a unique dry and wet, 21 day aging process that optimizes the texture and flavor of this cut and makes more a more tender product overall. Because bison is lean, it cooks about 3 times as quickly as beef, so it is best grilled or pan fried using a cast iron skillet until its internal temperature reaches 120-140 degrees (rare to medium rare.)- 62 grams of protein per 4 oz portion
